Owner Rahim Alami managed Pentagon City's Lebanese Taverna for seven years before opening H Street's pan-Mediterranean restaurant Souk--his first foray as chef as well. Alami, from Morocco, grew up in the restaurant business--his grandmother was chef for a French colonial family, and her influence is present on the menu here, like the watermelon Souk salad (she introduced him to the concept of fruit with greens). Alami is at the restaurant each morning by 6am and cooks everything himself--the small, red-tiled kitchen is open to the eight-table dining room so he interacts with customers, too, when he's not busy dishing up chicken shawarma or making hummus from scratch.
